Seize the Week on Monday

Monday.... We meet again. 

Last week was a BUST for me. I fell behind on housework, homework and blogging. 
Shockingly my family stayed fed and happy, so I suppose I should count that as breaking even and cut my losses (mostly sanity and sleep, right?

Anyways, here I am...trying to find a way to write about motivation on the LEAST motivating day pretty much EVER! Last night, I told myself that today was going to be awesome and that I would start to catch up on life. 

Good news! I am actually beginning to catch up on things and at 9:00 am I have actually accomplished quite a bit (bedding in two rooms, vacuum the main floor, clean the carpets in one of the three rooms on the main floor, sweep and dust the main floor). Oh, and I made breakfast for my family and did dishes too! Eff. Yes! Monday, I might get the best of you! 



I am determined to carry out all of my daily to do items this week and stay caught up! It will happen if I will it to, right? 

Here is to hoping that next Monday I have something really motivating to share with you, rather than the struggle to survive a Monday.

Roasted Red Potatoes

It is Tasty Tuesday here on the blog and I am going to share one of my go to side dishes with you!
We eat really healthy for the most part in our house, and I like to eat a lot of the same things because I like to prep my meals in big batches rather than cook every day. 
J doesn't like to eat the same thing all the time, and he surely doesn't like sweet potatoes as much as me, so these roasted red potatoes have become a staple side dish here. 
Oh, and they are EASY to make!



Ingredients: 
Red Potatoes
Mrs Dash (flavor of choice)
Olive Oil


Instructions:
1. Preheat oven to 350 and cube potatoes
2. Put in gallon size bag (or a bowl if you like doing dishes)
3. Add 1-2 TBSP of Olive Oil
4. Add Mrs. Dash to taste. Shake bag until everything looks evenly coated.
5. Line a cookie sheet with foil (makes dishes easier), put potatoes on foil evenly.
6. Cook for 45-60 minutes depending on your oven!
